Ingredients
- 1.5 lbs lamb, cut into chunks
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp cayenne pepper
- 1/2 cup dried apricots
- 2 cups chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season the lamb chunks with salt and pepper.
- Heat olive oil in a tagine or large pot over medium heat.
- Add the seasoned lamb and brown on all sides, then remove from the pot and set aside.
- In the same pot, sauté the chopped onion and garlic until softened.
- Add the ground cumin, coriander, cinnamon, ginger, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Return the browned lamb to the pot and add the dried apricots and chicken broth.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the lamb is tender.
- Adjust seasoning with salt and pepper if needed.
- Serve the tagine hot with couscous or crusty bread.
