Tagine (sudanese Spiced Fish Tagine)

Ingredients

  • 4 fish fillets
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup fish or vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a tagine or large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, coriander, turmeric, cinnamon, and cayenne pepper to the skillet. Cook for 1-2 minutes until fragrant.
  3. Place the fish fillets on top of the spiced onion mixture in the skillet. Season the fish with salt and pepper.
  4. Pour the diced tomatoes and fish or vegetable broth over the fish. Cover the skillet and let the fish simmer for 15-20 minutes, or until the fish is cooked through.
  5. Garnish the tagine with fresh cilantro before serving.
