Tagine (sudanese Spiced Fish Tagine)
Tagine is a traditional Sudanese dish that features spiced fish cooked in a flavorful tomato-based sauce. This recipe combines aromatic spices with tender fish to create a delicious and comforting meal.
Ingredients
- 4 fish fillets
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1/2 cup fish or vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a tagine or large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, coriander, turmeric, cinnamon, and cayenne pepper to the skillet. Cook for 1-2 minutes until fragrant.
- Place the fish fillets on top of the spiced onion mixture in the skillet. Season the fish with salt and pepper.
- Pour the diced tomatoes and fish or vegetable broth over the fish. Cover the skillet and let the fish simmer for 15-20 minutes, or until the fish is cooked through.
- Garnish the tagine with fresh cilantro before serving.
