Tahchin (assyrian Saffron Rice With Chicken)
Tahchin is a traditional Assyrian dish made with saffron-infused rice and tender chicken. This flavorful and aromatic dish is perfect for special occasions and gatherings.
Ingredients
- 2 cups basmati rice
- 4 chicken thighs, bone-in and skin-on
- 1/2 teaspoon ground saffron
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground turmeric
- 1/2 cup plain yogurt
- 3 eggs
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a large bowl, mix together the yogurt, saffron, cinnamon, cardamom, turmeric, salt, and pepper.
- Add the chicken thighs to the bowl and coat them with the marinade. Cover and refrigerate for at least 1 hour.
- Rinse the rice under cold water until the water runs clear. Drain the rice and set aside.
- In a large pot, bring 4 cups of water to a boil. Add the rice and cook for 6-8 minutes, or until the rice is parboiled. Drain the rice and set aside.
- In a separate bowl, beat the eggs and mix in the vegetable oil.
- Preheat the oven to 350°F (175°C). Grease a round baking dish with vegetable oil.
- Spread half of the rice evenly on the bottom of the baking dish.
- Arrange the marinated chicken thighs on top of the rice in the baking dish.
- Cover the chicken with the remaining rice, pressing down gently to form an even layer.
- Pour the egg and oil mixture over the rice, spreading it evenly.
- Cover the baking dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the rice forms a golden crust.
- Remove the tahchin from the oven and let it cool for 10 minutes before slicing and serving.
