Tahchin (assyrian Saffron Rice With Chicken)

Ingredients

  • 2 cups basmati rice
  • 4 chicken thighs, bone-in and skin-on
  • 1/2 teaspoon ground saffron
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground turmeric
  • 1/2 cup plain yogurt
  • 3 eggs
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix together the yogurt, saffron, cinnamon, cardamom, turmeric, salt, and pepper.
  2. Add the chicken thighs to the bowl and coat them with the marinade. Cover and refrigerate for at least 1 hour.
  3. Rinse the rice under cold water until the water runs clear. Drain the rice and set aside.
  4. In a large pot, bring 4 cups of water to a boil. Add the rice and cook for 6-8 minutes, or until the rice is parboiled. Drain the rice and set aside.
  5. In a separate bowl, beat the eggs and mix in the vegetable oil.
  6. Preheat the oven to 350°F (175°C). Grease a round baking dish with vegetable oil.
  7. Spread half of the rice evenly on the bottom of the baking dish.
  8. Arrange the marinated chicken thighs on top of the rice in the baking dish.
  9. Cover the chicken with the remaining rice, pressing down gently to form an even layer.
  10. Pour the egg and oil mixture over the rice, spreading it evenly.
  11. Cover the baking dish with aluminum foil and bake for 45 minutes.
  12. Remove the foil and bake for an additional 15 minutes, or until the rice forms a golden crust.
  13. Remove the tahchin from the oven and let it cool for 10 minutes before slicing and serving.
