Tahchin Morgh (persian Chicken And Rice Pilaf)
Tahchin Morgh is a delicious Persian dish made with chicken and rice pilaf. It's a flavorful and aromatic dish that is perfect for a special occasion or a family dinner.
Ingredients
- 2 cups basmati rice
- 1 pound chicken thighs, boneless and skinless
- 1 cup plain yogurt
- 3 eggs
- 1 teaspoon ground saffron
- 1 teaspoon turmeric
- 1/2 teaspoon ground cinnamon
- 1/2 cup vegetable oil
- Salt and pepper to taste
Instructions
- Wash the rice and soak it in salted water for 2 hours.
- Cut the chicken thighs into small pieces and marinate with yogurt, saffron, turmeric, cinnamon, salt, and pepper for 1 hour.
- Boil the marinated chicken in water until fully cooked, then shred the chicken.
- Beat the eggs and mix with the shredded chicken.
- Grease a large pot with vegetable oil and layer the bottom with a thin layer of rice.
- Spread the chicken and egg mixture over the rice, then cover with the remaining rice.
- Cover the pot and cook over low heat for 1 hour until the rice forms a golden crust.
- Once cooked, carefully invert the pot onto a serving platter to reveal the golden crust.
