Ingredients

  • 2 cups basmati rice
  • 1 pound chicken thighs, boneless and skinless
  • 1 cup plain yogurt
  • 3 eggs
  • 1 teaspoon ground saffron
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. Wash the rice and soak it in salted water for 2 hours.
  2. Cut the chicken thighs into small pieces and marinate with yogurt, saffron, turmeric, cinnamon, salt, and pepper for 1 hour.
  3. Boil the marinated chicken in water until fully cooked, then shred the chicken.
  4. Beat the eggs and mix with the shredded chicken.
  5. Grease a large pot with vegetable oil and layer the bottom with a thin layer of rice.
  6. Spread the chicken and egg mixture over the rice, then cover with the remaining rice.
  7. Cover the pot and cook over low heat for 1 hour until the rice forms a golden crust.
  8. Once cooked, carefully invert the pot onto a serving platter to reveal the golden crust.
