Ingredients

  • 3 cups basmati rice
  • 1/2 cup plain yogurt
  • 3 eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon ground saffron
  • 1/2 cup dried barberries
  • Salt and pepper to taste

Instructions

  1. Rinse the basmati rice until the water runs clear, then soak it in salted water for 2 hours.
  2. In a bowl, mix the yogurt, eggs, vegetable oil, and ground saffron.
  3. Drain the soaked rice and mix it with the yogurt mixture and barberries. Season with salt and pepper.
  4. Heat some oil in a non-stick pot and add the rice mixture, pressing it down firmly.
  5. Cover the pot and cook the rice over low heat for 45 minutes until the bottom forms a golden crust.
  6. Once done, carefully invert the pot onto a serving platter to reveal the crispy tahchin.
