Tahchin (persian Rice Pilaf With Saffron And Barberries)
Tahchin is a traditional Persian rice pilaf dish that is popular in Mizrahi Jewish cuisine. It is known for its crispy golden crust and flavorful saffron-infused rice. This recipe also incorporates tangy barberries for a burst of color and tartness.
Ingredients
- 3 cups basmati rice
- 1/2 cup plain yogurt
- 3 eggs
- 1/4 cup vegetable oil
- 1 teaspoon ground saffron
- 1/2 cup dried barberries
- Salt and pepper to taste
Instructions
- Rinse the basmati rice until the water runs clear, then soak it in salted water for 2 hours.
- In a bowl, mix the yogurt, eggs, vegetable oil, and ground saffron.
- Drain the soaked rice and mix it with the yogurt mixture and barberries. Season with salt and pepper.
- Heat some oil in a non-stick pot and add the rice mixture, pressing it down firmly.
- Cover the pot and cook the rice over low heat for 45 minutes until the bottom forms a golden crust.
- Once done, carefully invert the pot onto a serving platter to reveal the crispy tahchin.
