Tahchin (saffron-infused Chicken And Rice)
Tahchin is a classic Persian dish that features layers of saffron-infused chicken and rice, creating a beautiful golden crust when flipped and served. This savory and aromatic dish is a staple in Caspian cuisine, perfect for special occasions and gatherings.
Ingredients
- 2 cups basmati rice
- 1 pound chicken breast, cut into cubes
- 1/2 teaspoon ground saffron
- 1/2 cup plain yogurt
- 3 eggs
- 1/4 cup vegetable oil
- 1 onion, finely chopped
- 1 teaspoon turmeric
- Salt and pepper to taste
Instructions
- Wash the basmati rice and soak it in water for 2 hours. Drain the rice and set aside.
- In a bowl, mix the yogurt, eggs, and ground saffron. Add the chicken cubes to the mixture and marinate for 1 hour.
- In a large pot, heat the vegetable oil and sauté the chopped onion until golden. Add the marinated chicken, turmeric, salt, and pepper. Cook until the chicken is fully cooked.
- Parboil the rice in a separate pot for 5 minutes, then drain.
- In a non-stick pot, layer the parboiled rice and the cooked saffron-infused chicken, creating alternating layers. Cover the pot and cook over low heat for 45 minutes.
- Once the tahchin is cooked, let it cool for 10 minutes. Then, carefully flip the pot onto a serving platter to reveal the golden crust.
