Ingredients

  • 2 cups basmati rice
  • 1 pound chicken breast, cut into cubes
  • 1/2 teaspoon ground saffron
  • 1/2 cup plain yogurt
  • 3 eggs
  • 1/4 cup vegetable oil
  • 1 onion, finely chopped
  • 1 teaspoon turmeric
  • Salt and pepper to taste

Instructions

  1. Wash the basmati rice and soak it in water for 2 hours. Drain the rice and set aside.
  2. In a bowl, mix the yogurt, eggs, and ground saffron. Add the chicken cubes to the mixture and marinate for 1 hour.
  3. In a large pot, heat the vegetable oil and sauté the chopped onion until golden. Add the marinated chicken, turmeric, salt, and pepper. Cook until the chicken is fully cooked.
  4. Parboil the rice in a separate pot for 5 minutes, then drain.
  5. In a non-stick pot, layer the parboiled rice and the cooked saffron-infused chicken, creating alternating layers. Cover the pot and cook over low heat for 45 minutes.
  6. Once the tahchin is cooked, let it cool for 10 minutes. Then, carefully flip the pot onto a serving platter to reveal the golden crust.
