Tahchin (spiced Rice With Chicken)
Tahchin is a delicious Iranian dish made with spiced rice and tender chicken. It's a flavorful and comforting meal that's perfect for special occasions or family gatherings.
Ingredients
- 2 cups basmati rice
- 1 pound chicken breast, cut into cubes
- 1 onion, finely chopped
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground saffron
- 1/4 cup plain yogurt
- 3 tablespoons vegetable oil
- Salt and pepper to taste
- 2 tablespoons butter
Instructions
- Rinse the basmati rice until the water runs clear, then soak it in water for 30 minutes.
- In a large bowl, mix the chicken cubes with the chopped onion, turmeric, cumin, cinnamon, saffron, yogurt, vegetable oil, salt, and pepper. Let it marinate for 30 minutes.
- In a large pot, bring water to a boil and add the soaked rice. Cook for 6-7 minutes until the rice is parboiled, then drain and set aside.
- In a separate pot, melt the butter and layer the bottom with a thin layer of rice. Then add the marinated chicken mixture on top, followed by the remaining rice.
- Cover the pot with a lid and cook over low heat for 1 hour until the rice is fully cooked and the bottom forms a crispy crust.
- Once cooked, carefully invert the pot onto a serving platter to reveal the golden tahchin.
