Tahchin (spiced Rice With Chicken)

Ingredients

  • 2 cups basmati rice
  • 1 pound chicken breast, cut into cubes
  • 1 onion, finely chopped
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground saffron
  • 1/4 cup plain yogurt
  • 3 tablespoons vegetable oil
  • Salt and pepper to taste
  • 2 tablespoons butter

Instructions

  1. Rinse the basmati rice until the water runs clear, then soak it in water for 30 minutes.
  2. In a large bowl, mix the chicken cubes with the chopped onion, turmeric, cumin, cinnamon, saffron, yogurt, vegetable oil, salt, and pepper. Let it marinate for 30 minutes.
  3. In a large pot, bring water to a boil and add the soaked rice. Cook for 6-7 minutes until the rice is parboiled, then drain and set aside.
  4. In a separate pot, melt the butter and layer the bottom with a thin layer of rice. Then add the marinated chicken mixture on top, followed by the remaining rice.
  5. Cover the pot with a lid and cook over low heat for 1 hour until the rice is fully cooked and the bottom forms a crispy crust.
  6. Once cooked, carefully invert the pot onto a serving platter to reveal the golden tahchin.
