Ingredients
- 6 large egg yolks
- 1/2 cup granulated sugar
- 2 cups heavy cream

Instructions
- Preheat the oven to 325°F (165°C).
- In a mixing bowl, whisk together the egg yolks and 1/2 cup sugar until well combined.
- In a saucepan, heat the heavy cream, vanilla bean seeds, and salt over medium heat until it just begins to simmer.
- Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly.
- Strain the custard through a fine-mesh sieve into a large measuring cup or bowl.
- Divide the custard among 6 ramekins and place them in a large baking dish. Fill the baking dish with hot water halfway up the sides of the ramekins.
- Bake for 40-45 minutes, or until the custards are set around the edges but still slightly wobbly in the center.
- Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours, or up to 2 days.
- Before serving, sprinkle a thin, even layer of granulated sugar over the custards and caramelize with a kitchen torch or under the broiler until golden brown and bubbly.
