Ingredients

  • 6 large egg yolks
  • 1/2 cup granulated sugar
  • 2 cups heavy cream
  • 1 Tahitian vanilla bean, split and seeds scraped

  • Extra granulated sugar for caramelizing

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a mixing bowl, whisk together the egg yolks and 1/2 cup sugar until well combined.
  3. In a saucepan, heat the heavy cream, vanilla bean seeds, and salt over medium heat until it just begins to simmer.
  4. Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly.
  5. Strain the custard through a fine-mesh sieve into a large measuring cup or bowl.
  6. Divide the custard among 6 ramekins and place them in a large baking dish. Fill the baking dish with hot water halfway up the sides of the ramekins.
  7. Bake for 40-45 minutes, or until the custards are set around the edges but still slightly wobbly in the center.
  8. Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours, or up to 2 days.
  9. Before serving, sprinkle a thin, even layer of granulated sugar over the custards and caramelize with a kitchen torch or under the broiler until golden brown and bubbly.
