Ingredients

  • 8 tofu puffs
  • 100g bean sprouts
  • 2 carrots, julienned
  • 1 cucumber, thinly sliced
  • 1 cup peanuts, roasted and ground
  • 3 shallots, finely chopped
  • 2 cloves garlic, minced
  • 2 red chilies, finely chopped
  • 1 tsp tamarind paste
  • 1 tbsp palm sugar
  • 1 cup water
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Prepare the tofu puffs by cutting a slit in each one to create a pocket for the stuffing.
  2. Mix the bean sprouts, carrots, and cucumber in a bowl and set aside.
  3. In a pan, heat the vegetable oil and sauté the shallots, garlic, and red chilies until fragrant.
  4. Add the ground peanuts, tamarind paste, palm sugar, and water to the pan. Simmer until the sauce thickens.
  5. Stuff the tofu puffs with the mixed vegetables.
  6. Pour the peanut sauce over the stuffed tofu puffs and vegetables.
