Ingredients
- 8 tofu puffs
- 100g bean sprouts
- 2 shallots, finely chopped
- 2 cloves garlic, minced
- 1 red chili, finely chopped
- 1 tsp tamarind paste
- 1/2 cup roasted peanuts, finely ground
- 2 cups vegetable broth
- 2 tbsp sweet soy sauce
- 1 tbsp palm sugar
- 1 tbsp vegetable oil
- Salt to taste
Instructions
- Prepare the tofu puffs by cutting a slit in the side of each puff to create a pocket for the filling.
- In a pan, heat the vegetable oil and sauté the shallots, garlic, and red chili until fragrant.
- Add the bean sprouts and tamarind paste, and cook for 2-3 minutes.
- Stuff the tofu puffs with the bean sprout mixture.
- In a separate pot, combine the vegetable broth, ground peanuts, sweet soy sauce, and palm sugar. Bring to a simmer.
- Add the stuffed tofu puffs to the peanut sauce and let them simmer for 15-20 minutes, or until the sauce thickens.
- Season with salt to taste.
- Serve the Tahu Isi Kuah Kacang hot, garnished with some extra ground peanuts and a side of steamed rice.
