Ingredients
- 8 pieces of firm tofu
- 100g bean sprouts
- 2 shallots, finely chopped
- 2 cloves of garlic, minced
- 1 red chili, thinly sliced
- 1 spring onion, thinly sliced
- 1 egg
- 1 cup of cooking oil
- 1 cup of roasted peanuts, finely ground
- 3 tablespoons of sweet soy sauce
- 2 tablespoons of tamarind juice
- 1 teaspoon of salt
- 1 teaspoon of sugar
Instructions
- Prepare the tofu by cutting a slit in the middle to create a pocket for the filling.
- Mix bean sprouts, shallots, garlic, red chili, and spring onion in a bowl. Add the egg and mix well.
- Stuff the tofu with the filling mixture.
- Heat the cooking oil in a pan and fry the stuffed tofu until golden brown. Remove and drain on paper towels.
- In a separate pan, heat 2 tablespoons of cooking oil and sauté the ground peanuts until fragrant.
- Add sweet soy sauce, tamarind juice, salt, and sugar to the peanuts. Stir well to make the peanut sauce.
- Serve the stuffed tofu with the peanut sauce on top.
