Ingredients
- 4 pieces of firm tofu
- 100g bean sprouts
- 2 eggs
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 1 red chili, finely chopped
- 1 cup peanuts, roasted and ground
- 2 tbsp sweet soy sauce
- 1 tbsp tamarind paste
- 1 tsp palm sugar
- Salt to taste
- Oil for frying
Instructions
- Prepare the tofu by cutting a slit in the middle to create a pocket for the filling.
- Blanch the bean sprouts in boiling water for 1 minute, then drain and set aside.
- Beat the eggs and mix with the blanched bean sprouts, then stuff the mixture into the tofu pockets.
- Heat oil in a pan and fry the stuffed tofu until golden brown. Remove and drain on paper towels.
- In a separate pan, sauté garlic, onion, and red chili until fragrant. Add the ground peanuts, sweet soy sauce, tamarind paste, palm sugar, and salt. Cook until the sauce thickens.
- Serve the stuffed tofu with the peanut sauce on top.
