Tahu Isi Terasi (steamed Stuffed Tofu With Shrimp Paste)

Ingredients

  • 4 pieces of firm tofu
  • 100g shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 shallot, minced
  • 1 egg
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon ground white pepper
  • 2 tablespoons shrimp paste (terasi)
  • 2 tablespoons vegetable oil
  • 4 kaffir lime leaves, thinly sliced
  • 4 red chilies, thinly sliced (optional)

Instructions

  1. Prepare the tofu by cutting a slit in the middle to create a pocket for the filling.
  2. In a food processor, combine the shrimp, garlic, shallot, egg, cornstarch, salt, sugar, and white pepper. Process until smooth.
  3. Stuff the tofu pockets with the shrimp mixture.
  4. Steam the stuffed tofu for 10 minutes.
  5. In a pan, heat the vegetable oil and sauté the shrimp paste until fragrant.
  6. Add the steamed stuffed tofu to the pan and cook for another 5 minutes, flipping halfway through.
  7. Serve the Tahu Isi Terasi garnished with sliced kaffir lime leaves and red chilies.
