Tahu Mapo (spicy Mapo Tofu)

Ingredients

  • 1 block (14 oz) soft tofu, cut into cubes
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 green onions, chopped
  • 2 tbsp doubanjiang (spicy broad bean paste)
  • 1 tbsp soy sauce
  • 1 cup vegetable broth
  • 1 tsp sugar
  • 1/2 tsp Sichuan peppercorns, crushed
  • 1 tsp cornstarch mixed with 2 tbsp water

Instructions

  1. Heat the vegetable oil in a wok or large skillet over medium heat.
  2. Add the garlic, ginger, and green onions. Sauté for 1-2 minutes until fragrant.
  3. Stir in the doubanjiang and soy sauce, then add the tofu cubes. Gently stir to coat the tofu with the sauce.
  4. Pour in the vegetable broth and add the sugar and Sichuan peppercorns. Simmer for 10 minutes.
  5. Stir in the cornstarch mixture and cook for an additional 2-3 minutes until the sauce thickens.
  6. Remove from heat and serve hot, garnished with additional green onions if desired.
