Tahu Mapo (spicy Mapo Tofu)
Tahu Mapo, also known as Spicy Mapo Tofu, is a popular dish in Indonesian Chinese cuisine. It features soft tofu in a spicy, flavorful sauce, making it a favorite among those who enjoy a kick of heat in their meals.
Ingredients
- 1 block (14 oz) soft tofu, cut into cubes
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 2 green onions, chopped
- 2 tbsp doubanjiang (spicy broad bean paste)
- 1 tbsp soy sauce
- 1 cup vegetable broth
- 1 tsp sugar
- 1/2 tsp Sichuan peppercorns, crushed
- 1 tsp cornstarch mixed with 2 tbsp water
Instructions
- Heat the vegetable oil in a wok or large skillet over medium heat.
- Add the garlic, ginger, and green onions. Sauté for 1-2 minutes until fragrant.
- Stir in the doubanjiang and soy sauce, then add the tofu cubes. Gently stir to coat the tofu with the sauce.
- Pour in the vegetable broth and add the sugar and Sichuan peppercorns. Simmer for 10 minutes.
- Stir in the cornstarch mixture and cook for an additional 2-3 minutes until the sauce thickens.
- Remove from heat and serve hot, garnished with additional green onions if desired.
