Tahu Pedas (spicy Tempeh Tacos)

Ingredients

  • 1 block of tempeh, crumbled

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • Salt to taste
  • 4 tortillas
  • 1 cup shredded lettuce
  • 1 tomato, diced
  • 1/2 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the diced onion, minced garlic, and chopped red chili. Sauté until the onions are soft and translucent.
  3. Add the crumbled tempeh to the pan and cook for 5-7 minutes, stirring occasionally.
  4. Stir in the ground cumin, ground coriander, turmeric, and salt. Cook for another 2-3 minutes to let the flavors meld.
  5. Warm the tortillas in a separate pan or in the microwave.
  6. Assemble the tacos by spooning the spicy tempeh filling onto the warm tortillas. Top with shredded lettuce, diced tomato, and chopped cilantro.
  7. Serve the Tahu Pedas tacos with lime wedges on the side for squeezing over the tacos.
