Taita (injera Pizza)

Ingredients

  • 2 cups of teff flour
  • 3 cups of water
  • 1/2 teaspoon of salt
  • 1/2 cup of tomato sauce
  • 1 cup of mozzarella cheese, shredded
  • 1/2 cup of green bell peppers, diced
  • 1/2 cup of red onions, sliced
  • 1/4 cup of black olives, sliced
  • 1/4 cup of feta cheese, crumbled

Instructions

  1. In a large bowl, mix the teff flour, water, and salt to make the injera batter. Let it sit for 10 minutes.
  2. Heat a non-stick skillet over medium heat and pour a ladle of the injera batter to make a thin round injera. Cook for 2-3 minutes on each side. Repeat with the remaining batter to make 4 injera crusts.
  3. Preheat the oven to 400°F (200°C).
  4. Place the injera crusts on a baking sheet and spread tomato sauce over each crust.
  5. Sprinkle mozzarella cheese, green bell peppers, red onions, and black olives evenly over the crusts.
  6. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and sprinkle crumbled feta cheese on top.
  8. Slice and serve the Taita hot, and enjoy!
