Taita (injera Pizza)
Taita, also known as Injera Pizza, is a delicious fusion dish that combines the flavors of Eritrean cuisine with the concept of a classic Italian pizza. This unique recipe is a must-try for anyone who loves the tangy taste of injera and the savory toppings of a traditional pizza.
Ingredients
- 2 cups of teff flour
- 3 cups of water
- 1/2 teaspoon of salt
- 1/2 cup of tomato sauce
- 1 cup of mozzarella cheese, shredded
- 1/2 cup of green bell peppers, diced
- 1/2 cup of red onions, sliced
- 1/4 cup of black olives, sliced
- 1/4 cup of feta cheese, crumbled
Instructions
- In a large bowl, mix the teff flour, water, and salt to make the injera batter. Let it sit for 10 minutes.
- Heat a non-stick skillet over medium heat and pour a ladle of the injera batter to make a thin round injera. Cook for 2-3 minutes on each side. Repeat with the remaining batter to make 4 injera crusts.
- Preheat the oven to 400°F (200°C).
- Place the injera crusts on a baking sheet and spread tomato sauce over each crust.
- Sprinkle mozzarella cheese, green bell peppers, red onions, and black olives evenly over the crusts.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle crumbled feta cheese on top.
- Slice and serve the Taita hot, and enjoy!
