Taiwanese Beef Noodle Soup

Ingredients
- 1.5 lbs beef shank, cut into chunks
- 8 cups beef broth
- 1 onion, sliced
- 4 cloves garlic, minced
- 1-inch piece of ginger, sliced
- 3 star anise
- 2 cinnamon sticks
- 3 tbsp soy sauce
- 2 tbsp dark soy sauce
- 1 tbsp sugar
- 1 tsp five-spice powder
- Salt and pepper to taste
- 12 oz fresh or dried wheat noodles
- Green onions, chopped, for garnish
Instructions
- In a large pot, brown the beef shank over medium-high heat for 5 minutes.
- Add the onion, garlic, and ginger, and cook for another 2 minutes.
- Pour in the beef broth and add the star anise, cinnamon sticks, soy sauce, dark soy sauce, sugar, five-spice powder, salt, and pepper.
- Bring the broth to a boil, then reduce the heat to low and simmer for 1.5 hours, or until the beef is tender.
- Cook the noodles according to the package instructions, then divide them among serving bowls.
- Ladle the beef and broth over the noodles, and garnish with chopped green onions.
