Taiwanese Beef Noodle Soup

Ingredients

  • 1.5 lbs beef shank, cut into chunks
  • 8 cups beef broth
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, sliced
  • 3 star anise
  • 2 cinnamon sticks
  • 3 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp sugar
  • 1 tsp five-spice powder
  • Salt and pepper to taste
  • 12 oz fresh or dried wheat noodles
  • Green onions, chopped, for garnish

Instructions

  1. In a large pot, brown the beef shank over medium-high heat for 5 minutes.
  2. Add the onion, garlic, and ginger, and cook for another 2 minutes.
  3. Pour in the beef broth and add the star anise, cinnamon sticks, soy sauce, dark soy sauce, sugar, five-spice powder, salt, and pepper.
  4. Bring the broth to a boil, then reduce the heat to low and simmer for 1.5 hours, or until the beef is tender.
  5. Cook the noodles according to the package instructions, then divide them among serving bowls.
  6. Ladle the beef and broth over the noodles, and garnish with chopped green onions.
