Taiwanese Fried Rice Noodles (炒米粉)
炒米粉 (Taiwanese Fried Rice Noodles) is a classic Taiwanese dish that is quick and easy to make. It's a flavorful stir-fry dish that is perfect for a delicious weeknight meal.
Ingredients
- 8 oz rice noodles
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1/2 cup sliced pork belly
- 1/2 cup shrimp, peeled and deveined
- 1 cup bean sprouts
- 2 eggs, beaten
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1/2 tsp sugar
- 1/4 tsp white pepper
- 2 green onions, chopped
Instructions
- Soak the rice noodles in hot water for 5 minutes, then drain and set aside.
- Heat 1 tbsp of vegetable oil in a wok or large skillet over high heat.
- Add the garlic, pork belly, and shrimp, and stir-fry for 2-3 minutes until the pork is cooked through and the shrimp turn pink.
- Push the ingredients to one side of the wok, then add the remaining 1 tbsp of oil to the empty side.
- Pour the beaten eggs into the empty side of the wok and scramble until just set.
- Add the bean sprouts and soaked rice noodles to the wok, and stir-fry for 2 minutes.
- Add the soy sauce, oyster sauce, sugar, and white pepper to the wok, and toss everything together until well combined.
- Add the green onions and toss again to combine.
- Remove from heat and serve hot.
