Taiwanese Fried Rice Noodles (炒米粉)

Ingredients

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1/2 cup sliced pork belly
  • 1/2 cup shrimp, peeled and deveined
  • 1 cup bean sprouts
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1/2 tsp sugar
  • 1/4 tsp white pepper
  • 2 green onions, chopped

Instructions

  1. Soak the rice noodles in hot water for 5 minutes, then drain and set aside.
  2. Heat 1 tbsp of vegetable oil in a wok or large skillet over high heat.
  3. Add the garlic, pork belly, and shrimp, and stir-fry for 2-3 minutes until the pork is cooked through and the shrimp turn pink.
  4. Push the ingredients to one side of the wok, then add the remaining 1 tbsp of oil to the empty side.
  5. Pour the beaten eggs into the empty side of the wok and scramble until just set.
  6. Add the bean sprouts and soaked rice noodles to the wok, and stir-fry for 2 minutes.
  7. Add the soy sauce, oyster sauce, sugar, and white pepper to the wok, and toss everything together until well combined.
  8. Add the green onions and toss again to combine.
  9. Remove from heat and serve hot.
