Taiwanese Style Fried Rice (炒飯)

Ingredients

  • 3 cups cooked rice
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/2 cup diced ham or cooked shrimp (optional)
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Heat 1 tablespoon of oil in a wok or large skillet over medium heat.
  2. Add the beaten eggs and scramble until just set. Remove from the wok and set aside.
  3. Heat the remaining 1 tablespoon of oil in the wok. Add the minced garlic and stir-fry until fragrant.
  4. Add the mixed vegetables and diced ham or shrimp (if using) to the wok. Stir-fry for 2-3 minutes.
  5. Add the cooked rice to the wok. Use a spatula to break up any clumps and mix with the vegetables and meat.
  6. Add the soy sauce, oyster sauce, sugar, and white pepper to the wok. Stir-fry for another 2-3 minutes until everything is well combined.
  7. Return the scrambled eggs to the wok and mix with the rice. Stir-fry for an additional 1-2 minutes.
  8. Remove from heat and serve the Taiwanese Style Fried Rice hot.
