Ingredients

  • 2 lbs lamb, cut into chunks
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground coriander
  • 1/2 tsp ground nutmeg
  • 1 cup pitted dates
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large tajine or heavy-bottomed pot, heat the olive oil over medium heat.
  2. Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
  3. Add the chopped onion to the pot and cook until softened, then add the minced garlic and cook for another minute.
  4. Stir in the ground ginger, cumin, cinnamon, turmeric, coriander, and nutmeg, and cook for a few minutes until fragrant.
  5. Return the lamb to the pot, add the dates, and pour in the chicken broth.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the lamb is tender.
  7. Season with salt and pepper to taste before serving.
