Tajine (arabian Lamb And Date Tagine)
Tajine is a traditional Saudi Arabian dish that combines the rich flavors of lamb with the sweetness of dates, creating a truly delightful and aromatic meal.
Ingredients
- 2 lbs lamb, cut into chunks
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp ground turmeric
- 1/2 tsp ground coriander
- 1/2 tsp ground nutmeg
- 1 cup pitted dates
- 2 cups chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large tajine or heavy-bottomed pot, heat the olive oil over medium heat.
- Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
- Add the chopped onion to the pot and cook until softened, then add the minced garlic and cook for another minute.
- Stir in the ground ginger, cumin, cinnamon, turmeric, coriander, and nutmeg, and cook for a few minutes until fragrant.
- Return the lamb to the pot, add the dates, and pour in the chicken broth.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the lamb is tender.
- Season with salt and pepper to taste before serving.
