Ingredients
- 1 kg white fish fillets, such as cod or haddock
- 2 onions, sliced
- 3 tomatoes, chopped
- 3 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- Juice of 1 lemon
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup water
Instructions
- Season the fish fillets with salt, pepper, and half of the lemon juice. Set aside.
- In a large tagine or deep skillet, heat the olive oil over medium heat. Add the sliced onions and cook until softened.
- Add the minced garlic, ground cumin, ground coriander, paprika, turmeric, and cayenne pepper to the tagine. Stir well to combine the spices with the onions.
- Add the chopped tomatoes, cilantro, and parsley to the tagine. Cook for a few minutes until the tomatoes start to break down.
- Gently place the seasoned fish fillets on top of the tomato and onion mixture in the tagine.
- Pour the water over the fish and cover the tagine. Let it simmer for about 15-20 minutes, or until the fish is cooked through.
- Drizzle the remaining lemon juice over the fish before serving.
