Tajine De Poisson Djiboutien (djiboutian Fish Tagine)

Ingredients

  • 1 kg white fish fillets, such as cod or haddock
  • 2 onions, sliced
  • 3 tomatoes, chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup water

Instructions

  1. Season the fish fillets with salt, pepper, and half of the lemon juice. Set aside.
  2. In a large tagine or deep skillet, heat the olive oil over medium heat. Add the sliced onions and cook until softened.
  3. Add the minced garlic, ground cumin, ground coriander, paprika, turmeric, and cayenne pepper to the tagine. Stir well to combine the spices with the onions.
  4. Add the chopped tomatoes, cilantro, and parsley to the tagine. Cook for a few minutes until the tomatoes start to break down.
  5. Gently place the seasoned fish fillets on top of the tomato and onion mixture in the tagine.
  6. Pour the water over the fish and cover the tagine. Let it simmer for about 15-20 minutes, or until the fish is cooked through.
  7. Drizzle the remaining lemon juice over the fish before serving.
