Ingredients

  • 4 chicken thighs
  • 2 onions, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin

  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1 preserved lemon, quartered
  • 1/2 cup green olives
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, and cumin.
  2. Heat the olive oil in a tagine or large skillet over medium heat. Add the chicken thighs and brown on both sides. Remove and set aside.
  3. In the same tagine or skillet, add the onions and garlic. Cook until softened.
  4. Add the coriander, turmeric, cinnamon, ginger, and cayenne pepper. Stir to combine.
  5. Return the chicken thighs to the tagine or skillet. Add the preserved lemon and olives.
  6. Cover and simmer for 45 minutes to 1 hour, or until the chicken is tender.
  7. Sprinkle with chopped cilantro and parsley before serving.
