Tajine Zitoun (algerian Lamb And Vegetable Stew)
Tajine Zitoun is a traditional Algerian stew that combines tender lamb with a variety of vegetables and aromatic spices. This hearty and flavorful dish is perfect for a cozy family meal or a special occasion.
Ingredients
- 1 lb lamb, cut into chunks
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 can (14 oz) chickpeas, drained and rinsed
- 1 cup green olives
- 2 tomatoes, diced
- 3 tbsp olive oil
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- Fresh cilantro for garnish
Instructions
- In a large tajine or Dutch oven, heat the olive oil over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the chopped onions and garlic. Cook until softened, about 5 minutes.
- Stir in the ground cumin, coriander, paprika, turmeric, and cayenne pepper. Cook for 1 minute until fragrant.
- Return the lamb to the pot and add the carrots, potatoes, zucchini, bell pepper, chickpeas, olives, and tomatoes. Season with salt and pepper.
- Pour in the chicken or vegetable broth. Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 1.5 to 2 hours, or until the lamb is tender.
- Adjust the seasoning if needed. Garnish with fresh cilantro before serving.
