Tallarin Saltado (Stir-Fried Noodles)
Stir-Fried Noodles, also known as Tallarin Saltado, is a popular Peruvian-Chinese fusion dish that combines the flavors of stir-fried noodles with the unique spices and ingredients of Peruvian cuisine.
Ingredients
- 8 oz (225g) of noodles
- 2 tablespoons of vegetable oil
- 1 lb (450g) of beef, thinly sliced
- 1 red onion, sliced
- 2 tomatoes, cut into wedges
- 1 bell pepper, sliced
- 3 cloves of garlic, minced
- 2 tablespoons of soy sauce
- 2 tablespoons of vinegar
- 1 tablespoon of aji amarillo paste (Peruvian yellow chili paste)
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Boil the noodles according to the package instructions. Drain and set aside.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over high heat.
- Add the beef and stir-fry until browned. Remove from the pan and set aside.
- Heat the remaining tablespoon of oil in the same pan.
- Add the red onion, tomatoes, bell pepper, and garlic. Stir-fry for 2-3 minutes.
- Return the beef to the pan.
- Add the cooked noodles, soy sauce, vinegar, and aji amarillo paste. Stir-fry for another 2-3 minutes.
- Season with salt and pepper to taste.
- Garnish with chopped cilantro before serving.
