Tallarin Saltado (Stir-Fried Noodles)

Stir-Fried Noodles, also known as Tallarin Saltado, is a popular Peruvian-Chinese fusion dish that combines the flavors of stir-fried noodles with the unique spices and ingredients of Peruvian cuisine.

Tallarin Saltado (Stir-Fried Noodles)

Ingredients

  • 8 oz (225g) of noodles
  • 2 tablespoons of vegetable oil
  • 1 lb (450g) of beef, thinly sliced
  • 1 red onion, sliced
  • 2 tomatoes, cut into wedges
  • 1 bell pepper, sliced
  • 3 cloves of garlic, minced
  • 2 tablespoons of soy sauce
  • 2 tablespoons of vinegar
  • 1 tablespoon of aji amarillo paste (Peruvian yellow chili paste)
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Boil the noodles according to the package instructions. Drain and set aside.
  2. Heat 1 tablespoon of vegetable oil in a large pan or wok over high heat.
  3. Add the beef and stir-fry until browned. Remove from the pan and set aside.
  4. Heat the remaining tablespoon of oil in the same pan.
  5. Add the red onion, tomatoes, bell pepper, and garlic. Stir-fry for 2-3 minutes.
  6. Return the beef to the pan.
  7. Add the cooked noodles, soy sauce, vinegar, and aji amarillo paste. Stir-fry for another 2-3 minutes.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped cilantro before serving.
