Ingredients
- 8 oz (225g) boneless, skinless chicken breast, thinly sliced
- 8 oz (225g) fresh egg noodles
- 1 red onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 2 tomatoes, cut into wedges
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons vinegar
- 1 tablespoon aji amarillo paste (Peruvian yellow chili paste)
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Boil the fresh egg noodles according to package instructions. Drain and set aside.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the sliced chicken and stir-fry until cooked through. Remove from the wok and set aside.
- Heat the remaining 1 tablespoon of vegetable oil in the same wok. Add the red onion, red bell pepper, and garlic. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
- Add the cooked chicken back into the wok, along with the tomatoes, soy sauce, vinegar, and aji amarillo paste. Stir-fry for another 2-3 minutes.
- Add the cooked noodles to the wok and toss everything together until well combined.
- Season with salt and pepper to taste, and garnish with chopped cilantro.
- Remove from heat and serve the stir-fried noodles with chicken hot.
