Tallarines Saltados (Stir-Fried Noodles)
Stir-Fried Noodles (Tallarines Saltados) is a popular dish in Peruvian Chinese cuisine, combining the flavors of Chinese stir-fry with Peruvian ingredients.
Ingredients
- 1 lb (450g) flank steak, thinly sliced
- 8 oz (225g) spaghetti or egg noodles
- 1 red onion, sliced
- 1 tomato, sliced
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1/4 cup (60ml) soy sauce
- 2 tablespoons (30ml) red wine vinegar
- 1 tablespoon (15ml) soy sauce
- 1 tablespoon (15ml) vegetable oil
- 1 tablespoon (15ml) sesame oil
- Salt and pepper to taste
Instructions
- Boil the noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over high heat. Add the sliced flank steak and cook until browned. Remove from the skillet and set aside.
- In the same skillet, add the red onion, tomato, green onions, and garlic. Stir-fry for 2-3 minutes.
- Return the cooked steak to the skillet. Add the boiled noodles, soy sauce, red wine vinegar, and sesame oil. Stir-fry for another 2-3 minutes.
- Season with salt and pepper to taste. Serve hot.
