Tamal De Elote Con Queso (corn Tamal With Cheese)
Tamal de Elote con Queso, or Corn Tamal with Cheese, is a traditional Costa Rican dish that is perfect for breakfast or as a snack. It is made with fresh corn and cheese, and it's a delicious and comforting treat.
Ingredients
- 6 ears of fresh corn, husked and kernels removed
- 1 cup of cornmeal
- 1 cup of milk
- 1/2 cup of butter, melted
- 1 cup of grated cheese (queso blanco or mozzarella)
- Salt to taste
Instructions
- In a blender, blend the corn kernels with the milk until smooth.
- In a large bowl, mix the cornmeal, melted butter, and a pinch of salt.
- Add the blended corn mixture to the bowl and mix well.
- Place a spoonful of the corn mixture on a piece of aluminum foil, add a spoonful of grated cheese in the center, and then cover with more corn mixture.
- Wrap the tamal in the aluminum foil and repeat with the remaining mixture.
- Place the tamales in a large pot with a steamer basket and enough water to reach the bottom of the basket.
- Cover and steam for 1 hour, adding more water as needed.
- Let the tamales cool for a few minutes before serving.
