Tamales Kapampangan
Tamales Kapampangan is a traditional Filipino dish that originated from the Kapampangan region. It is a savory and hearty dish made with ground rice, coconut milk, and various fillings, wrapped in banana leaves and steamed to perfection.
Ingredients
- 2 cups glutinous rice
- 1 cup coconut milk
- 1 cup water
- 1 teaspoon salt
- 1 cup cooked chicken, shredded
- 1 cup pork belly, diced
- 1 cup shrimp, peeled and deveined
- 1 cup hard-boiled eggs, sliced
- 1 cup garbanzos (chickpeas)
- 1 cup annatto seeds (achuete)
- Banana leaves, for wrapping
Instructions
- In a bowl, combine glutinous rice, coconut milk, water, and salt. Mix well to make the rice batter.
- In a separate pot, cook the pork belly until browned. Add the shrimp and cook until pink. Set aside.
- In a small saucepan, heat the annatto seeds with oil to extract the color. Strain the oil and discard the seeds.
- Assemble the tamales by spreading a portion of the rice batter on a piece of banana leaf, then adding a portion of the cooked chicken, pork, shrimp, eggs, and garbanzos. Fold the banana leaf to enclose the filling and secure with string.
- Arrange the tamales in a steamer and steam for 45-60 minutes or until the rice is cooked through.
- Serve the tamales hot and enjoy!
