Tamarind Bbq Chicken Fiesta

Ingredients

  • 4 chicken thighs
  • 1 cup tamarind pulp
  • 3 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix tamarind pulp, brown sugar, soy sauce, Worcestershire sauce, garlic, ginger, chili powder, salt, and pepper to make the marinade.
  2. Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Heat a grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side, or until fully cooked and nicely charred.
  4. While grilling, baste the chicken with the remaining marinade to enhance the flavor.
  5. Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.
