Ingredients
- 4 chicken thighs
- 1 cup tamarind pulp
- 3 tbsp brown sugar
- 2 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- In a bowl, mix tamarind pulp, brown sugar, soy sauce, Worcestershire sauce, garlic, ginger, chili powder, salt, and pepper to make the marinade.
- Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 2 hours, or overnight for best results.
- Heat a grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side, or until fully cooked and nicely charred.
- While grilling, baste the chicken with the remaining marinade to enhance the flavor.
- Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.
