Tamarind Chutney (chintakaya Pachadi)

Tamarind Chutney, also known as Chintakaya Pachadi, is a popular and tangy condiment in Telugu cuisine. It is made from tamarind, jaggery, and a blend of aromatic spices, making it a perfect accompaniment to savory dishes like dosa, idli, and vada.

Tamarind Chutney (chintakaya Pachadi)

Ingredients

  • 1 cup tamarind pulp
  • 1 cup jaggery
  • 1 tsp red chili powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/4 tsp turmeric powder
  • Salt to taste
  • 2 cups water

Instructions

  1. In a saucepan, combine tamarind pulp, jaggery, and water. Bring to a boil and simmer for 10 minutes.
  2. Add red chili powder, turmeric powder, and salt. Mix well and continue to simmer for another 5 minutes.
  3. In a small pan, heat some oil and add cumin seeds and mustard seeds. Once they splutter, pour the tempering over the tamarind mixture.
  4. Stir well and let it cool to room temperature.
  5. Transfer the chutney to a clean, airtight container and refrigerate. It can be stored for up to 2 weeks.
