Tamarind Chutney (chintakaya Pachadi)
Tamarind Chutney, also known as Chintakaya Pachadi, is a popular and tangy condiment in Telugu cuisine. It is made from tamarind, jaggery, and a blend of aromatic spices, making it a perfect accompaniment to savory dishes like dosa, idli, and vada.
Ingredients
- 1 cup tamarind pulp
- 1 cup jaggery
- 1 tsp red chili powder
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/4 tsp turmeric powder
- Salt to taste
- 2 cups water
Instructions
- In a saucepan, combine tamarind pulp, jaggery, and water. Bring to a boil and simmer for 10 minutes.
- Add red chili powder, turmeric powder, and salt. Mix well and continue to simmer for another 5 minutes.
- In a small pan, heat some oil and add cumin seeds and mustard seeds. Once they splutter, pour the tempering over the tamarind mixture.
- Stir well and let it cool to room temperature.
- Transfer the chutney to a clean, airtight container and refrigerate. It can be stored for up to 2 weeks.
