Tambunan Pumpkin Curry

Ingredients

  • 1 small pumpkin, peeled and cubed
  • 2 tablespoons cooking oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, diced
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 2 tablespoons curry powder
  • Salt to taste

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
  3. Add the diced tomatoes and cook until they soften.
