Ingredients
- 1 small pumpkin, peeled and cubed
- 2 tablespoons cooking oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, diced
- 1 cup coconut milk
- 1 cup vegetable broth
- 2 tablespoons curry powder
- Salt to taste
- Chopped cilantro for garnish
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
- Add the diced tomatoes and cook until they soften.
- Stir in the curry powder and salt, then add the cubed pumpkin. Mix well to coat the pumpkin with the spices.
- Pour in the coconut milk and vegetable broth. Bring to a gentle simmer and cook for about 45 minutes, or until the pumpkin is tender.
