Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 small onion, chopped
  • 4 cloves garlic
  • 1 cup fresh parsley, chopped
  • 1 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • Vegetable oil for frying

Instructions

  1. Drain the soaked chickpeas and pat them dry with a paper towel.
  2. In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, cayenne pepper, and salt. Pulse until the mixture is finely ground but not pureed.
  3. Transfer the mixture to a bowl and refrigerate for 30 minutes.
  4. Form the mixture into small patties and fry in hot oil until golden brown and crispy, about 3-4 minutes per side.
  5. Remove the falafel from the oil and drain on paper towels.
  6. Serve the tamiya hot with tahini sauce, pita bread, and fresh vegetables.
