Tandir Kabob (fragrant Herb-stuffed Beef)

Ingredients

  • 2 lbs beef, cut into large chunks
  • 1 cup fresh cilantro, chopped
  • 1 cup fresh parsley, chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 1/4 cup vegetable oil
  • 1/4 cup water

Instructions

  1. In a bowl, mix together the cilantro, parsley, onion, garlic, cumin, coriander, black pepper, and salt to create the herb stuffing.
  2. Cut a pocket into each beef chunk and stuff with the herb mixture.
  3. Heat the vegetable oil in a large pot over medium heat. Sear the stuffed beef chunks until browned on all sides.
  4. Add water to the pot, cover, and cook over low heat for 3 hours, or until the beef is tender.
  5. Serve the Tandir Kabob hot, accompanied by rice or flatbread.
