Tandir Kabob (fragrant Herb-stuffed Chicken)

Ingredients

  • 1 whole chicken, about 3-4 lbs
  • 1 cup fresh cilantro, chopped
  • 1 cup fresh parsley, chopped
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the chicken and pat dry with paper towels.
  2. In a bowl, mix together the cilantro, parsley, onion, garlic, cumin, coriander, paprika, salt, pepper, and olive oil to create the herb stuffing.
  3. Carefully loosen the skin of the chicken and stuff the herb mixture under the skin, spreading it evenly.
  4. Preheat the oven to 375°F (190°C).
  5. Place the stuffed chicken in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 10 minutes before carving and serving.
