Tandir Kabob (fragrant Herb-stuffed Chicken)
Tandir Kabob is a traditional Uzbek dish featuring fragrant herb-stuffed chicken cooked to perfection. This flavorful and aromatic dish is a favorite in Uzbek cuisine, perfect for special occasions and gatherings.
Ingredients
- 1 whole chicken, about 3-4 lbs
- 1 cup fresh cilantro, chopped
- 1 cup fresh parsley, chopped
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the chicken and pat dry with paper towels.
- In a bowl, mix together the cilantro, parsley, onion, garlic, cumin, coriander, paprika, salt, pepper, and olive oil to create the herb stuffing.
- Carefully loosen the skin of the chicken and stuff the herb mixture under the skin, spreading it evenly.
- Preheat the oven to 375°F (190°C).
- Place the stuffed chicken in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving and serving.
