Tandir Kabob (fragrant Herb-stuffed Fish)

Ingredients

  • 4 whole fish (such as trout or sea bass), gutted and scaled
  • 1 cup fresh cilantro, chopped
  • 1 cup fresh dill, chopped
  • 1 cup fresh parsley, chopped
  • 4 cloves garlic, minced
  • 1 lemon, sliced
  • Salt and pepper to taste
  • 4 tablespoons olive oil

Instructions

  1. Preheat the stovetop grill or a large skillet over medium heat.
  2. In a bowl, mix together the chopped cilantro, dill, parsley, minced garlic, salt, and pepper.
  3. Stuff each fish cavity with the herb mixture and a couple of lemon slices.
  4. Brush the outside of the fish with olive oil and season with additional salt and pepper.
  5. Place the fish on the grill or skillet and cook for 10-15 minutes on each side, or until the fish is cooked through and the skin is crispy.
  6. Remove from heat and let the fish rest for a few minutes before serving.
