Tandoori Cauliflower Steaks

Ingredients

  • 1 large head of cauliflower
  • 1 cup plain yogurt
  • 2 tablespoons tandoori masala spice mix
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the leaves and stem from the cauliflower, then cut it into 4 thick slices to create "steaks".
  3. In a bowl, mix together the yogurt, tandoori masala, lemon juice, garlic, ginger, and salt.
  4. Coat each cauliflower steak with the tandoori marinade, making sure to cover both sides.
  5. Heat a large skillet over medium heat and add the cauliflower steaks. Cook for 5-7 minutes on each side, or until they are tender and charred in spots.
  6. Transfer the skillet to the oven and bake for an additional 10 minutes to ensure the cauliflower is fully cooked.
  7. Remove from the oven and garnish with fresh cilantro before serving.
