Ingredients
- 2 cups cooked tandoori chicken, shredded
- 1 cup shredded mozzarella cheese

- 4 large flour tortillas

Instructions
- Place a tortilla on a flat surface and sprinkle half of the mozzarella cheese over one half of the tortilla.
- Evenly distribute the shredded tandoori chicken, diced red onion, and chopped cilantro over the cheese.
- Fold the tortilla in half to cover the filling.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Carefully place the filled tortilla in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
- Repeat with the remaining tortillas and filling.
- Slice the quesadillas into wedges and serve hot.
