Ingredients

  • 2 cups cooked tandoori chicken, shredded
  • 1 cup shredded mozzarella cheese

  • 4 large flour tortillas
  • 2 tablespoons olive oil

Instructions

  1. Place a tortilla on a flat surface and sprinkle half of the mozzarella cheese over one half of the tortilla.
  2. Evenly distribute the shredded tandoori chicken, diced red onion, and chopped cilantro over the cheese.
  3. Fold the tortilla in half to cover the filling.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  5. Carefully place the filled tortilla in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
  6. Repeat with the remaining tortillas and filling.
  7. Slice the quesadillas into wedges and serve hot.
