Ingredients
- 2 cups cooked tandoori chicken, shredded
- 1 cup shredded mozzarella cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced red onions
- 4 large flour tortillas
- 2 tablespoons butter
- 1/4 cup chopped cilantro
- 1/4 cup sour cream (for serving)
Instructions
- Place a tortilla on a flat surface and sprinkle a quarter of the cheese evenly over the tortilla.
- Evenly distribute the shredded tandoori chicken, bell peppers, red onions, and cilantro over the cheese.
- Sprinkle another quarter of the cheese over the filling and place another tortilla on top.
- Repeat the process to make 3 more quesadillas.
- Heat a large skillet over medium heat and melt 1/2 tablespoon of butter.
- Place one quesadilla in the skillet and cook until the bottom is golden brown and the cheese is starting to melt, about 3 minutes.
- Flip the quesadilla, adding more butter to the skillet if needed, and cook until the second side is golden brown and the cheese is melted, about 3 minutes.
- Repeat with the remaining quesadillas.
- Serve the quesadillas hot with a dollop of sour cream.
