Tandoori Sabzi Seekh (tandoori Vegetable Skewers)
Tandoori Sabzi Seekh is a delicious and flavorful East Indian dish that features marinated vegetables grilled to perfection. This vegetarian version of the classic tandoori skewers is a great addition to any barbecue or gathering.
Ingredients
- 1 cup plain yogurt
- 2 tablespoons tandoori masala
- 1 tablespoon lemon juice
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/2 teaspoon salt
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 large red onion, cut into chunks
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 1 tablespoon oil
Instructions
- In a large bowl, mix together the yogurt, tandoori masala, lemon juice, ginger paste, garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, and salt.
- Add the bell peppers, onion, zucchini, and cherry tomatoes to the marinade. Toss to coat the vegetables evenly. Cover and refrigerate for at least 1 hour.
- Preheat the grill to medium-high heat. Thread the marinated vegetables onto skewers, alternating the different vegetables.
- Brush the vegetable skewers with oil and place them on the grill. Cook for 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove the skewers from the grill and serve hot with your favorite chutney or dipping sauce.
