Tandoori Tofu Skewers

Ingredients

  • 1 block of firm tofu, pressed and cut into cubes
  • 1 cup plain yogurt
  • 2 tablespoons tandoori masala
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • Salt to taste
  • 1 onion, cut into chunks
  • 1 bell pepper, cut into chunks

Instructions

  1. In a bowl, mix together the yogurt, tandoori masala, lemon juice, ground cumin, paprika, minced garlic, grated ginger, and salt.
  2. Add the tofu cubes to the marinade, making sure they are well coated. Let it marinate for at least 15 minutes.
  3. Thread the marinated tofu, onion, and bell pepper onto skewers.
  4. Heat a grill pan or stovetop grill over medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the tofu is lightly charred and the vegetables are tender.
  5. Serve the tandoori tofu skewers hot with a side of naan bread and mint chutney.
