Tang Cu Dou Fu (sweet And Sour Tofu)

Ingredients

  • 1 block of firm tofu, cut into cubes
  • 1/2 cup cornstarch
  • 1/4 cup vegetable oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3/4 cup pineapple chunks
  • 1/4 cup ketchup
  • 3 tablespoons rice vinegar
  • 3 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Instructions

  1. In a large bowl, coat the tofu cubes with cornstarch.
  2. Heat the vegetable oil in a pan over medium-high heat and fry the tofu until golden and crispy. Remove and set aside.
  3. In the same pan, sauté the bell pepper, onion, pineapple chunks, ginger, and garlic until the vegetables are tender.
  4. In a small bowl, mix together the ketchup, rice vinegar, brown sugar, and soy sauce. Pour the sauce into the pan with the vegetables.
  5. Add the cornstarch slurry to the pan and stir until the sauce thickens.
  6. Add the crispy tofu to the pan and gently toss to coat it with the sweet and sour sauce.
  7. Serve the Tang Cu Dou Fu hot with steamed rice.
