Ingredients
- 1 lb beef, thinly sliced
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- 8 small tortillas
- 1/2 cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- In a large skillet, heat some oil over medium-high heat. Add the beef and cook until browned. Remove from the skillet and set aside.
- In the same skillet, add the onion, tomatoes, bell pepper, and garlic. Cook until the vegetables are tender.
- Return the beef to the skillet and add the cumin, paprika, red pepper flakes, salt, and pepper. Cook for an additional 5 minutes.
- Warm the tortillas in a separate skillet or in the oven.
- Fill the tortillas with the beef mixture and top with fresh cilantro. Serve with lime wedges.
