Ingredients

  • 1 pound pork, thinly sliced
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1 cup pineapple chunks
  • 1 bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 1 cup sugar
  • 1 cup vinegar
  • 1/4 cup ketchup
  • 1/4 cup soy sauce
  • 1/2 cup water
  • 4 cups cooked rice
  • 1 cup shredded lettuce
  • 1/2 cup sliced cucumber

Instructions

  1. Coat the pork slices in cornstarch, then dip in beaten eggs.
  2. Heat oil in a pan and fry the pork until crispy and golden brown. Set aside.
  3. In a separate pan, combine sugar, vinegar, ketchup, soy sauce, and water to make the sweet and sour sauce. Bring to a boil, then add pineapple, bell pepper, and onion. Cook until the vegetables are tender.
  4. Assemble the burrito bowls by dividing the rice, crispy pork, sweet and sour sauce, lettuce, and cucumber among 4 bowls.
