Tangsuyuk (탕수육) Lettuce Wraps

Ingredients

  • 1 pound pork loin, thinly sliced
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1 cup pineapple chunks
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup sugar
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 1 tablespoon cornstarch, dissolved in 2 tablespoons water
  • 8 large lettuce leaves

Instructions

  1. Coat the pork slices in cornstarch, dip in beaten eggs, and fry until crispy. Set aside.
  2. In a saucepan, combine pineapple, bell pepper, onion, ketchup, rice vinegar, sugar, soy sauce, and water. Bring to a boil.
  3. Stir in the dissolved cornstarch and cook until the sauce thickens.
  4. Add the crispy pork to the sauce and toss to coat.
  5. Place a spoonful of tangsuyuk in each lettuce leaf, wrap, and serve.
