Tangy Lemon Rice
Tangy Lemon Rice is a popular South Indian dish known for its refreshing citrus flavor and aromatic spices. This dish is quick and easy to prepare, making it perfect for a weekday meal or a weekend brunch.
Ingredients
- 2 cups cooked rice
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal (black gram lentils)
- 1/4 teaspoon asafoetida (hing)
- 10-12 curry leaves
- 2-3 green chilies, slit lengthwise
- 1/4 cup peanuts
- 1/2 teaspoon turmeric powder
- Salt to taste
- Juice of 2 lemons
- 2 tablespoons chopped cilantro (coriander leaves) for garnish
Instructions
- Heat oil in a pan and add mustard seeds. When the seeds crackle, add urad dal, asafoetida, curry leaves, and green chilies. Sauté for a minute.
- Add peanuts and sauté until they turn golden brown.
- Add turmeric powder and mix well.
- Add the cooked rice and salt. Mix gently to combine all the ingredients.
- Turn off the heat and add lemon juice. Mix well.
- Garnish with chopped cilantro and serve hot.
