Tangy Lemon Rice

Ingredients

  • 2 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal (black gram lentils)
  • 1/4 teaspoon asafoetida (hing)
  • 10-12 curry leaves
  • 2-3 green chilies, slit lengthwise
  • 1/4 cup peanuts
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Juice of 2 lemons
  • 2 tablespoons chopped cilantro (coriander leaves) for garnish

Instructions

  1. Heat oil in a pan and add mustard seeds. When the seeds crackle, add urad dal, asafoetida, curry leaves, and green chilies. Sauté for a minute.
  2. Add peanuts and sauté until they turn golden brown.
  3. Add turmeric powder and mix well.
  4. Add the cooked rice and salt. Mix gently to combine all the ingredients.
  5. Turn off the heat and add lemon juice. Mix well.
  6. Garnish with chopped cilantro and serve hot.
