Tangy Mango Rice (ಮಾವಿನ ಅನ್ನ)

Ingredients

  • 2 cups cooked rice
  • 1 ripe mango, peeled and grated
  • 1/2 cup grated coconut
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 2-3 green chilies, finely chopped
  • 1/4 cup roasted peanuts
  • Salt to taste
  • Few curry leaves
  • 2 tbsp chopped coriander leaves

Instructions

  1. Heat oil in a pan and add mustard seeds. Once they splutter, add turmeric powder, green chilies, and curry leaves.
  2. Add grated mango and sauté for a few minutes until it softens.
  3. Add grated coconut, roasted peanuts, and salt. Mix well.
  4. Add the cooked rice and mix gently until well combined.
  5. Garnish with chopped coriander leaves and serve hot.
