Ingredients
- 2 cups cooked rice
- 1 ripe mango, peeled and grated
- 1/2 cup grated coconut
- 2 tbsp oil
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- 2-3 green chilies, finely chopped
- 1/4 cup roasted peanuts
- Salt to taste
- Few curry leaves
- 2 tbsp chopped coriander leaves
Instructions
- Heat oil in a pan and add mustard seeds. Once they splutter, add turmeric powder, green chilies, and curry leaves.
- Add grated mango and sauté for a few minutes until it softens.
- Add grated coconut, roasted peanuts, and salt. Mix well.
- Add the cooked rice and mix gently until well combined.
- Garnish with chopped coriander leaves and serve hot.
