Tangy Salvadoran Ceviche (Ceviche Salvadoreño Agridulce)

Ingredients

  • 1 pound fresh white fish, such as tilapia or sea bass, diced
  • 1 cup lime juice
  • 1/2 cup orange juice
  • 1/2 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup pineapple, diced
  • 1 jalapeño, seeded and finely chopped
  • Salt and pepper to taste

Instructions

  1. In a large glass or ceramic bowl, combine the diced fish, lime juice, and orange juice. Make sure the fish is completely submerged in the juices. Cover and refrigerate for 2 hours, stirring occasionally.
  2. After 2 hours, drain the excess liquid from the fish.
  3. Add the red onion, bell pepper, tomato, cilantro, pineapple, and jalapeño to the fish. Mix gently to combine.
  4. Season with salt and pepper to taste.
  5. Refrigerate for an additional 30 minutes to allow the flavors to meld.
  6. Serve the ceviche chilled, garnished with additional cilantro if desired.
