Tangy Tamarind Rice

Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 1 lemon-sized ball of tamarind
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1/2 tsp fenugreek seeds
  • 2-3 dried red chilies
  • 10-12 curry leaves
  • 1/4 tsp asafoetida (hing)
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 2 tbsp roasted peanuts
  • 2 tbsp chopped coriander leaves

Instructions

  1. Wash and cook the basmati rice with 2 cups of water. Once cooked, spread it on a plate to cool.
  2. Soak the tamarind in warm water for 15 minutes, then extract the pulp and set aside.
  3. Heat oil in a pan and add mustard seeds, fenugreek seeds, dried red chilies, and curry leaves. Sauté until the seeds splutter.
  4. Add the tamarind pulp, turmeric powder, asafoetida, and salt. Cook until the mixture thickens.
  5. Add the cooked rice to the tamarind mixture and mix well. Add roasted peanuts and chopped coriander leaves. Mix gently.
  6. Tangy Tamarind Rice is ready to be served.
