Tangy Tambuli Rice (Yogurt-based Rice)

Ingredients

  • 1 cup rice
  • 2 cups yogurt
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 2-3 green chilies, chopped
  • 1 inch ginger, grated
  • 1/4 cup grated coconut
  • 1/4 cup chopped coriander leaves
  • Salt to taste
  • Water as needed

Instructions

  1. Wash the rice and cook it in a pot with 2 cups of water until it is soft and fluffy. Let it cool.
  2. In a mixing bowl, whisk the yogurt until smooth. Add the cooked rice to the yogurt and mix well.
  3. Heat a small pan and add the mustard seeds. When they start to splutter, add the cumin seeds, green chilies, and grated ginger. Sauté for a minute.
  4. Pour this tempering over the yogurt-rice mixture. Add salt, grated coconut, and chopped coriander leaves. Mix everything together.
  5. Adjust the consistency by adding water if needed. The tambuli rice should be creamy and slightly tangy.
  6. Chill the Tangy Tambuli Rice for a few hours before serving. Enjoy it as a refreshing and flavorful meal!
