Tangy Tomato Rasam

Ingredients

  • 4 ripe tomatoes, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, slit lengthwise
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon black peppercorns
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon tamarind paste
  • 1 tablespoon fresh coriander leaves, chopped
  • Salt to taste
  • 2 cups water
  • 1 tablespoon ghee or oil
  • 1 teaspoon mustard seeds
  • A few curry leaves

Instructions

  1. In a large pot, combine the chopped tomatoes, onion, garlic, ginger, green chili, cumin seeds, black peppercorns, turmeric powder, tamarind paste, coriander leaves, salt, and water.
  2. Bring the mixture to a boil and then reduce the heat to a simmer. Let it cook for 15-20 minutes until the tomatoes are completely soft.
  3. Once the tomatoes are cooked, use an immersion blender to blend the mixture until smooth. Alternatively, you can transfer the mixture to a blender and blend until smooth.
  4. In a small pan, heat ghee or oil. Add the mustard seeds and curry leaves. Once the mustard seeds start to splutter, pour this tempering over the rasam and mix well.
  5. Simmer the rasam for a few more minutes and then remove from heat.
  6. Serve hot with steamed rice or enjoy as a light soup.
